  • 125ml (1/2 cup) maple syrup
  • 60ml (1/4 cup) ABC Sweet Soy Sauce Kecap Manis
  • 2 tablespoons fish sauce
  • 2 tablespoons rice wine vinegar
  • 1 long fresh red chili, thinly sliced, deseeded (optional)
  • 400g fresh egg noodles
  • 180g pkt baby leaves and beetroot
  • 1 carrot, peeled, shredded
  • 1/2 cup torn fresh coriander sprigs
  • 1/4 cup fresh mint leaves
  • 2 tablespoons salted roasted peanuts, coarsely chopped

  • Step 1
    MAKE THE STICKY PORK Place the pork in a large frying pan over high heat. Cook, stirring occasionally, for 7 minutes or until well browned. Add the maple syrup, kecap manis, fish sauce, vinegar, and chili, if using. Bring to boil. Reduce heat to medium. Stir in 60ml (1/4 cup) water. Simmer, stirring occasionally, for 2 minutes or until the sauce thickens enough to coat the pork. Remove from heat.

    COOK THE NOODLES Meanwhile, place noodles in a large saucepan of boiling water. Cook for 2 minutes or until just tender. Drain and refresh under cold running water.
  • Step 3
    SERVE THE SALAD Combine the noodles, leaves, carrot, coriander, and mint on a platter. Top with some pork. Serve with peanuts and remaining pork on the side.
