  • 1 teaspoon light olive oil
  • 200g chicken tenderloins
  • 1 garlic clove, finely chopped
  • 1 teaspoon finely chopped ginger
  • 225g peeled, deseeded pumpkin, cut into thin 4cm pieces
  • 1/2 bunch broccolini, halved lengthways
  • Fresh long red chili, sliced (optional), to serve
  • Fresh coriander sprigs, to serve
  • Steamed brown basmati rice, to serve
  • Lime halves, to serve
